Roman-Style Braised Green Beans

Ingredients
- 2 tbsp extra-virgin olive oil
- 1 yellow onion, thinly sliced
- 10 oz cherry tomatoes, halved (about 2 cups)
- 3 garlic cloves, thinly sliced
- ½ tsp sweet paprika
- 1 lb green beans, trimmed
- Finely chopped fresh parsley, for serving
- Parmesan cheese, for serving
- Salt, to taste
Steps
- 1Heat olive oil in a pot over medium heat. Add onion and cook, stirring often, for about 8 minutes, or until softened.
- 2Stir in tomatoes, garlic and paprika. Cook, stirring often, for about 5 minutes, or until the tomatoes soften.
- 3Stir in green beans and ¼ cup water. Season with salt. Reduce heat to low, cover and cook for about 15 minutes, stirring occasionally, until the beans are tender.
- 4Transfer to a serving bowl and sprinkle with parsley and Parmesan cheese.
